Avocado, Lime, and Coriander Dressing

with Cilantro Oil

I love making different salads in the summer. It’s like my body tells me I need to eat as much raw food as I can. But sometimes salads can taste a little bland… unless of course, you get them dressed!!!!

Here’s a beautiful dressing that you can drizzle over any salad or use to dip with crudités that have very refreshing cleansing and alkalizing properties.

Avocados are a nutrient-dense food rich in folate (a natural form of folic acid), healthy monounsaturated fats, vitamin C, K, additional B vitamins, potassium and other minerals and fiber. Healthy fat plays a role in estrogen production and reproductive hormonal balance. Coriander has numerous health benefits including supporting healthy detoxification from heavy metals. DōTERRA lime essential oil, like many of the citrus oils, comes from the rind of the fruit and are high in a component called limonene (this helps to provide daily cellular support amongst other benefits) Whizz it up and drizzle or dip my friends.

  • Blender

Ingredients

  • 1/2 Avocado
  • 1/4 (125) Cup (g) Greek Yoghurt or Vegan Yoghurt
  • 1/2 (120) Cup (ml) Water
  • 1 cup (25) cup (g) Coriander or 1 drop of dōTERRA coriander oil
  • 1 Clove Garlic
  • 1 Lime, juiced

Instructions

  • Place all ingredients in a food processor or high-speed blender, season with salt and pepper and blitz until smooth. Add additional water if necessary to achieve the desired texture.
